Ad Gefrin
Ad Gefrin is located in Wooler and was developed on land that had previously been a transport company. The distillery was built by Eileen and Alan Ferguson, Eileen being the daughter of the previous land owner. The distillery was built over a number of years culminating in its opening in March 2023.
Until its own whisky is matured, the distillery offers a blended whisky, Tácnbora, comprising Irish grain whisky and Scottish malt and grain whiskies with ages of between 7 and 8 years at 42.6%. A second blend with slightly older grain and malt whiskies at 43.9% is called Corengyst.
The distillery is using locally grown LG Diablo spring barley at 25t every 3 weeks and supplied by Simpson's in Berwick. The barley is milled in one tonne batches to produce 70% husk, 20% grit and 10% flour. The milled barley is mashed using a first water of 65°C for 1 hour and a second water at 75°C for 2 hours. A third water removes the remaining sugars but is reserved for the first water of the next mash.
Although the distillery uses both gas and solar energy, it is careful to manage energy consumption with heat exchangers and insulated intermediate storage tanks.
There are four 5000ℓ washbacks of Douglas Fir (this is just another name for Oregon Pine)
with space made available for an additional four. When all eight
are is use the distillery can run 24/7.
5000!l of wort is fermented with 5kg of unbranded yeast. A long fermentation of 96-100 hours gives additional
sweeter and fruitier flavours
in the wash. The 5000ℓ of wash at 8% ABV is distilled to 20% low wines in the wash still and then to 75%-65% in the
spirit still to produce 650ℓ of new make spirit. Various casks are being used:
limited French virgin oak, PX sherry, Four Roses bourbon, Sauternes, Oloroso and Amarone.
The distillery has warehouse space for 1200 racked casks on their sides.
